1 kg Vine tomatoes - 8 tbsp extra virgin olive oil - juice of half a lemon - 1/2 clove garlic, sliced into wafer-thin slices - 1/2 red chilli pepper, finely chopped - large handful of coarsely chopped fresh herbs such as dill, chervil and chives - salt and pepper
Combine the olive oil, lemon juice, garlic (optional), chilli pepper and herbs in a bowl. Cut the tomatoes into sections and remove the seeds and membranes. Cut the fruit flesh into small cubes. Add the tomato cubes to the herb dressing and stir to combine. Serve with a slice of toasted artisan bread and cheese or use as a garnish for fried fish, etc. For a more pronounced Italian flavour, you could use basil as one of the herbs. Or, for a Middle Eastern salsa, use coriander or mint.
