Panzanella Prominente

These are the ingredients you need

6 ripe salato tomatoes, roughly chopped - (stale) ciabatta bread - ½ tsp coarse sea salt - 6 tbsp olive oil - 1 yellow pepper cut into small cubes - 2 tbsp capers - 1 small red onion (cut into rings) - 1 clove of garlic, crushed - ¼ cucumber, sliced and then cut in half again - 3 tbsp white wine vinegar - 8 basil leaves


Cut the ciabatta bread into 1 cm cubes. Heat 4 tbsp olive oil in a frying pan and sprinkle with ½ tsp coarse sea salt. Fry the bread cubes until golden brown and crispy. In a large bowl, mix together the sliced tomatoes, yellow pepper, garlic, cucumber, red onion, white wine vinegar and capers. Season this vegetable mixture to taste with salt and pepper. Just before serving, add the crispy fried bread and 2 tbsp olive oil and stir well. Garnish with basil leaves and serve the panzanella immediately. Buon appetito!
