STUFFED CAPRESE TOMATOES WITH MOZZARELLA AND GREEN PESTO

These are the ingredients you need

10 cocktail tomatoes - 1 ball of mozzarella - 100 g fresh pesto 5 g basil leaves

Preparation

Cut off the tops of the tomatoes and keep the caps with the crowns on. You will use these later to put on top of the stuffed tomatoes. Chop the mozzarella into small cubes and mix with the pesto. Finely chop the basil and stir half into the mozzarella mixture. Hollow out the tomatoes with a small spoon. Make sure to remove the seeds and their membranes completely. Fill each tomato with around 1 tbsp of the mozzarella-pesto mixture and garnish with some chopped basil and the tomato tops.
