Marinated grilled vegetables with cherry plum vine tomatoes

These are the ingredients you need

200 g cherry plum vine tomatoes - 1 zucchini - 1 eggplant - 1 red and 1 yellow pepper - 1 fennel bulb - 1 clove garlic, grated - ½ red chilli pepper, finely chopped - 12 tbsp extra virgin olive oil - juice of half a lemon - ½ bunch flat-leafed parsley, chopped - salt and freshly ground black pepper

Preparation

Combine the olive oil, lemon juice, chilli pepper, garlic and parsley in a bowl for the marinade. Season with freshly ground black pepper and a good pinch of salt. Heat the grill pan. Cut the tomatoes in half and cut the other vegetables into thin slices. Grill the vegetables until they develop nice dark stripes from grilling. Grill the tomatoes only on their cut sides. Allow the vegetables to cool and pour the marinade over them. Serve as a side dish or starter, garnished, for example, with a small ball of buffalo mozzarella.
