Tomato, mango, fresh ginger and sea salt

These are the ingredients you need

4 vine tomatoes - 1 ripe mango - handful of fresh rocket leaves - 2 cm fresh ginger - extra virgin olive oil - coarse sea salt - freshly ground pepper

Preparation

Dice the ginger and juice it using the garlic press. Only use the juice, not the pulp. Cut the tomatoes into thick slices. Peel the mango and cut the flesh from the seed in sections. Mix the mango and tomato slices with the freshly squeezed ginger juice, allowing the flavours to mix. Place a piece of mango and a rocket leaf on each tomato slice. Pierce with a skewer and sprinkle very lightly with a few grains of sea salt and some freshly ground pepper. Drizzle with a little oil. The mango and tomato can also be served unsalted, with the salt adjacent for dipping.
