Salad with cherry tomatoes, mozzarella, mint sauce and basil

This salad with mini tomatoes in three different colours is a joy to behold. What's more, each colour has its own characteristic taste, resulting in a delicious combination.

Ingredients

  • 400 g cherry tomatoes
  • 3 sprigs of fresh mint
  • 3 tbsp white wine vinegar
  • 5 tbsp water
  • 5 tsp brown sugar
  • 150 g mini mozzarella balls
  • Bunch of fresh basil
  • Salt and pepper
  • Olive oil
  • Optional: chili flakes

How to prepare

  1. Pick the leaves from the mint and chop these finely.
  2. Combine the water, vinegar and sugar in a saucepan and heat until just before it starts to simmer.
  3. Remove the pan from the heat and add the mint to the water, vinegar and sugar mixture. Stir thoroughly.
  4. Halve the cherry tomatoes and set aside in a bowl.
  5. Season the halved cherry tomatoes with a splash of olive oil and some salt and pepper.
  6. Drain the mini mozzarella balls in a sieve or colander.
  7. Pinch a few tops off the basil.

To finish

  1. Divide the halved tomatoes between four plates.
  2. Divide the mini mozzarella balls into 4 portions and place in the centre of each plate.
  3. Drizzle the mint sauce over the tomatoes and mini mozzarella and garnish with a few basil tops.
  4. For an extra kick, sprinkle the mini mozzarella balls with a pinch of chili flakes.
