Carpaccio of mini cherry tomatoes, ricotta and rocket
This carpaccio of mini cherry tomatoes is a real taste sensation. Delicious served as a side dish.
Ingredients
- 100 g ricotta
- 28 mini cherry tomatoes
- 1 lemon
- sorrel or rocket
- balsamic vinegar
- salt and pepper
How to prepare
- Thinly slice 7 mini tomatoes per plate.
- Top with 4 tsp ricotta followed by some sorrel or rocket leaves.
- Grate some lemon zest over the tomato slices and season with 1 tbsp balsamic vinegar per plate.
- Season to taste with salt and pepper.
