Carpaccio of mini cherry tomatoes, ricotta and rocket

This carpaccio of mini cherry tomatoes is a real taste sensation. Delicious served as a side dish.

Ingredients

  • 100 g ricotta
  • 28 mini cherry tomatoes
  • 1 lemon
  • sorrel or rocket
  • balsamic vinegar
  • salt and pepper

How to prepare

  1. Thinly slice 7 mini tomatoes per plate.
  2. Top with 4 tsp ricotta followed by some sorrel or rocket leaves.
  3. Grate some lemon zest over the tomato slices and season with 1 tbsp balsamic vinegar per plate.
  4. Season to taste with salt and pepper.
